Schwarz- oder Gr\u00fcntee-Extrakt, ges\u00fc\u00dft mit 5 bis 8 % Haushaltszucker, ist die traditionelle Grundlage f\u00fcr die Kombucha-Fermentation.<\/p>\n<p>Kombucha-Tee besteht aus zwei Teilen: einer schwimmenden Zellulose-Pellikelschicht, auch &#8220;Biofilm&#8221; Trotz seines japanischen Namens, der w\u00f6rtlich \u00fcbersetzt &#8220;Seetangtee&#8221; bedeutet, ist das Getr\u00e4nk Kombucha in Japan als &#8220;kocha kinoko&#8221; bekannt.<\/p>\n<p>Sie wurde erstmals in Ostasien zu medizinischen Zwecken verwendet. Kombucha stammt urspr\u00fcnglich aus dem Nordosten Chinas (Mandschurei), wo er w\u00e4hrend der Tsin-Dynastie (&#8220;Ling Chi&#8221;) um 220 v. Chr. wegen seiner entgiftenden und energiespendenden Eigenschaften gesch\u00e4tzt wurde.<\/p>\n<p>Der Teepilz wurde 414 n. Chr. von dem Arzt Kombu in Japan eingef\u00fchrt, der ihn zur Behandlung der Verdauungsprobleme des Kaisers Inkyo einsetzte. Grunds\u00e4tzlich bezieht sich SCOBY also auf alle Mikroben in Kombucha. Es wurde eine gro\u00dfe Vielfalt von Hefen identifiziert. <i>Saccharomyces<\/i>, <i>Schizosaccharomyces<\/i>, <i>Zygosacchomyces<\/i> und <i>Brettanomyces<\/i> sind alles Hefeorganismen, die in Kombucha vorkommen. Auch <i>Candida-Arten<\/i> sind in einer Vielzahl von Kombuchas zu finden. Der bakterielle Bestandteil von Kombucha umfasst mehrere Arten, darunter fast immer <i>Komagataeibacter xylinus<\/i> (fr\u00fcher Gluconacetobacter xylinus).<\/p>\n<p>In Kombucha sind Hefen und Bakterien an Stoffwechselaktivit\u00e4ten beteiligt, die den Zucker auf unterschiedliche und sich erg\u00e4nzende Weise nutzen. Hefen wandeln mit Hilfe von <i>Invertase<\/i> Saccharose (Haushaltszucker) in Einfachzucker wie Glucose und Fructose um und produzieren dann mit Hilfe der <i>Glykolyse<\/i> Alkohol.<\/p>\n<p>Wie kommt es, dass mein Kombucha keinen Alkohol enth\u00e4lt, werden Sie vielleicht denken?<\/p>\n<p>Essigs\u00e4urebakterien wie das bereits erw\u00e4hnte <i>Komagataeibacter xylinus<\/i> nehmen dann diesen Alkohol und machen daraus Essigs\u00e4ure. Dies ist der grundlegende Prozess der Essigherstellung. Au\u00dferdem stellen sie aus Glukose Glucons\u00e4ure und Glucurons\u00e4ure her. Durch diese Bildung von organischen S\u00e4uren w\u00e4hrend der Fermentation sinkt der pH-Wert des Kombucha-Tees. Sie wird saurer.<\/p>\n<p>Dar\u00fcber hinaus enth\u00e4lt Kombucha Enzyme und Aminos\u00e4uren, Polyphenole und verschiedene andere organische S\u00e4uren, die je nach Zubereitung variieren. Weitere spezifische Bestandteile sind Ethanol, Glycerin, Milchs\u00e4ure, Usnins\u00e4ure und B-Vitamine.
