Ostasien entstanden ist. Die genaue Herkunft ist unbekannt. Man stellt es her, indem man ges\u00fc\u00dften Tee mit einer Kombination aus Bakterien und Hefen fermentieren l\u00e4sst. Diese Zusammenarbeit hei\u00dft SCOBY: Symbiotic Culture of Bacteria and Yeast. Die Milchs\u00e4urebakterien, Essigs\u00e4urebakterien und Hefen wandeln den Zucker in S\u00e4uren, etwas Alkohol und Kohlendioxid um. Das Ergebnis ist ein Getr\u00e4nk, das angenehm s\u00e4uerlich schmeckt, leicht prickelt und sich vielseitig variieren l\u00e4sst.<\/p>\n<p>W\u00e4hrend der Fermentation bildet sich an der Oberfl\u00e4che der Fl\u00fcssigkeit eine geleeartige Scheibe aus Zellulose. Fast jeder nennt diese Scheibe &#8220;den SCOBY&#8221;, aber technisch hei\u00dft sie Pellikel oder Biofilm. Liebevoll wird sie auch &#8220;die Mutter&#8221; oder &#8220;der Teepilz&#8221; genannt. Der eigentliche SCOBY ist das Ganze: die Fl\u00fcssigkeit und das Pellikel zusammen. L\u00f6sen Sie 50-100 Gramm Zucker pro Liter im hei\u00dfen Tee auf.<\/li>\n<li>Lassen Sie den ges\u00fc\u00dften Tee vollst\u00e4ndig auf Raumtemperatur abk\u00fchlen. Zu hei\u00dfer Tee t\u00f6tet die Mikroorganismen in Ihrem Starter ab.<\/li>\n<li>Stellen Sie sicher, dass Ihr Glasgef\u00e4\u00df sauber ist. Sp\u00fclen Sie es vorher gr\u00fcndlich mit hei\u00dfem Wasser aus.<\/li>\n<li>Gie\u00dfen Sie den abgek\u00fchlten Tee in das Gef\u00e4\u00df. F\u00fcgen Sie etwa 10% reifen Kombucha hinzu (also 100 ml pro Liter) zusammen mit dem Pellikel.<\/li>\n<li>Decken Sie das Gef\u00e4\u00df mit einem Tuch ab und befestigen Sie es mit einem Gummiband. Verwenden Sie keinen Deckel: die Fermentation braucht Sauerstoff.<\/li>\n<li>Stellen Sie das Gef\u00e4\u00df an einen Platz bei Raumtemperatur oder etwas w\u00e4rmer (20-30\u00b0C), ohne direkte Sonneneinstrahlung. H\u00f6here Temperaturen beschleunigen die Fermentation und machen das Ergebnis saurer.<\/li>\n<li>Lassen Sie 7 bis 14 Tage fermentieren. Probieren Sie nach einer Woche regelm\u00e4\u00dfig mit einem sauberen L\u00f6ffel. Angenehm s\u00e4uerlich und nicht mehr zu s\u00fc\u00df? Dann ist es fertig.<\/li>\n<li>Optional: Messen Sie den pH-Wert. Er sollte unter 4,6 liegen.
