Dit geeft kefir zijn zure smaak en helpt de melk dikker te maken.<\/li>\n<li>Streptococcus- en Lactococcus-bacteri\u00ebn, die bijdragen aan zowel de smaakontwikkeling als die karakteristieke lichte &#8216;bubbel&#8217;.<\/li>\n<li>Verschillende soorten gisten (zoals <em>Kluyveromyces marxianus<\/em> en <em>Saccharomyces cerevisiae<\/em>) die kleine hoeveelheden alcohol en koolstofdioxide produceren, wat zorgt voor dat licht gistige aroma.<\/li>\n<\/ul>\n<p>Wat kefir uniek maakt in vergelijking met yoghurt hoe deze diverse en rijke gemeenschap samenwerkt.
