Plantaardige kaas? Hoewel het verleidelijk is om plantaardige \u201cmelk\u201d zoals soja- of havermelk te gebruiken, zal het resultaat tegenvallen. De meeste van deze melksoorten bevatten maar kleine hoeveelheden van de bouwstenen van kaas: eiwitten, vetten en koolhydraten.    <\/p>\n<p>Let&#8217;s go nuts, baby! Cashewnoten zijn hier de eerste keus vanwege hun neutrale smaak en hoge gehalte aan eiwitten en vetten. De structuur kwam van agar-agar, carrageen of zetmeel. Functioneel, maar niet echt overtuigend.<\/p>\n<\/div><\/li><li class=\"fusion-li-item\" style=\"\"><span class=\"icon-wrapper circle-yes\">2<\/span><div class=\"fusion-li-item-content\">\n<p>Tweede generatie: Enter fermentatie! Hier werd het interessant. We begonnen echte micro-organismen te gebruiken &#8211; vooral bacteri\u00ebn &#8211; om echte smaak te ontwikkelen. Denk aan rejuvelac, (veganistische) yoghurt of kefir, zuurkoolsap, of zelfs probiotische pillen als starters voor onze kaas. Beter dan edelgistvlokken, maar nog steeds niet geweldig omdat de meeste van deze microben normaal gesproken niet in kaas voorkomen.<\/p>\n<\/div><\/li><li class=\"fusion-li-item\" style=\"\"><span class=\"icon-wrapper circle-yes\">3<\/span><div class=\"fusion-li-item-content\">\n<p>Derde generatie: Now we&#8217;re talking! Dit is waar kaasliefhebbers enthousiast worden. Het draait allemaal om de magie van fermentatie. We maken \u201cechte kaas\u201d van plantaardige bronnen, met echte veganistische kaasculturen en schimmelculturen voor authentieke smaak en textuur.<\/p>\n<\/div><\/li><\/ul><div class=\"fusion-title title fusion-title-4 fusion-sep-none fusion-title-text fusion-title-size-two\" style=\"--awb-margin-top:50px;\"><h2 class=\"fusion-title-heading title-heading-left\" style=\"margin:0;\">Ja, er bestaan echt veganistische kaasculturen<\/h2><\/div><div class=\"fusion-text fusion-text-4\"><p>De reden dat de derde generatie veganistische kazen zoveel beter is, is niet alleen dat ze gefermenteerd zijn, maar dat ze gefermenteerd zijn met <a href=\"https:\/\/startercultures.eu\/nl\/product-category\/fermentation-nl\/zuivel-ook-vegan-nl\/vegan-kaas-nl\/starters-nl-2\/\" target=\"_blank\" rel=\"noopener\">echte kaasmicroben<\/a>. Letterlijk dezelfde die ons camembert, brie, gorgonzola of Gouda geven. Het is letterlijk wat de complexe, gelaagde smaken cre\u00ebert waar die we zoeken in goede kaas. Wanneer micro-organismen aan het werk gaan, breken ze eiwitten en vetten af tot kleinere, smaakvollere verbindingen. Denk aan het verschil tussen verse melk en oude Gouda, of de diepte van een traditionele camembert of roquefortkaas. Het is allemaal het werk van microben.    <\/p>\n<p>Dit proces is trouwens niet uniek voor kaas. Sommige van onze meest geliefde smaken komen van fermentatie: de umami-diepte in sojasaus en miso, de pittige complexiteit van zuurdesembrood, de rijke funkiness van gedroogde salami, of de heldere zuurgraad in goede wijn of kombucha. Je krijgt ongeveer 1,5 keer het gewicht aan geweekte cashews vergeleken met droge.<\/div><\/li><li class=\"fusion-li-item\" style=\"\"><span class=\"icon-wrapper circle-yes\">3<\/span><div class=\"fusion-li-item-content\">Stap 3: Blend tot perfectie &#8211; Giet de cashews af en blend ze in je keukenmachine met ongeveer 20% extra vocht (water). Dit is waar je die 10-20% kokosolie toevoegt als je extra romigheid wilt. Blend tot je de gladste mix mogelijk hebt.<\/div><\/li><li class=\"fusion-li-item\" style=\"\"><span class=\"icon-wrapper circle-yes\">4<\/span><div class=\"fusion-li-item-content\">\n<p>Stap 4: Start de magie (Fermentatie) &#8211; Voeg je primaire startcultuur en secundaire culturen zoals P. camemberti (en misschien G. candidum) toe. Voeg nu 1% transglutaminase toe. Blend nog wat meer.<\/p>\n<\/div><\/li><li class=\"fusion-li-item\" style=\"\"><span class=\"icon-wrapper circle-yes\">5<\/span><div class=\"fusion-li-item-content\">Stap 5: Vorm het &#8211; Bekleed een kaasvorm met kaasdoek (of een schone thee- of zakdoek). Geen vorm? Maak er zelf een van bijvoorbeeld een yoghurtemmertje! Lepel de cashewroom in de vorm.<\/div><\/li><li class=\"fusion-li-item\" style=\"\"><span class=\"icon-wrapper circle-yes\">6<\/span><div class=\"fusion-li-item-content\">\n<p>Stap 6: Primaire fermentatie &#8211; Laat de kaas ongeveer 24-36 uur fermenteren. Als je een nerd bent met tools: je mikt op een pH van 4.5-5.0.<\/p>\n<\/div><\/li><li class=\"fusion-li-item\" style=\"\"><span class=\"icon-wrapper circle-yes\">7<\/span><div class=\"fusion-li-item-content\">\n<p>Stap 7: Zouttijd &#8211; Haal de kaas uit de vorm, weeg hem en bestrooi alle kanten met ongeveer 2% zeezout (gebaseerd op het gewicht van de kaas).<\/p>\n<\/div><\/li><li class=\"fusion-li-item\" style=\"\"><span class=\"icon-wrapper circle-yes\">8<\/span><div class=\"fusion-li-item-content\">\n<p>Stap 8: Secundaire fermentatie (Schimmelgroei) &#8211; Dit is waar de witte schimmel zijn magie doet. Leg de kaas op een sushimatje in een plastic bakje dat een beetje open staat (voor luchtcirculatie en hoge luchtvochtigheid). Ideale temperatuur is 10-12\u00b0C (een kelder, schuurtje, of (liever niet), je koelkast). Draai de kaas dagelijks om. Echt h\u00e8, elke dag! Na ongeveer 1,5 tot 2 weken zou je een mooie witte pluizige laag moeten zien.<\/p>\n<\/div><\/li><li class=\"fusion-li-item\" style=\"\"><span class=\"icon-wrapper circle-yes\">9<\/span><div class=\"fusion-li-item-content\">Stap 9: Laat &#8216;m rijpen &#8211; Als de schimmel goed ontwikkeld is, wikkel je je kaas in kaaspapier of aluminiumfolie. Ja, het wordt soms \u201cvleeslijm\u201d genoemd in professionele keukens, wat absoluut doodeng (en erg niet-vegan) klinkt. Maar hier is de realiteit: transglutaminase is gewoon een enzym dat eiwitbindingen cre\u00ebert. Je lichaam produceert het zelfs van nature &#8211; het is essentieel voor bloedstolling en wondgenezing.   <\/p>\n<p>Bij het maken van kaas is dit enzym &#8211; dat veganistisch is en door microben wordt geproduceerd &#8211; absoluut cruciaal voor vegan varianten. Zonder dit zal je prachtige cashewcreatie waarschijnlijk uit elkaar vallen als je het uit de vorm haalt. Traditionele zuivelkaas krijgt zijn structuur van case\u00efne-eiwitten die van nature samenbinden tijdens het kaasproces. Aangezien we geen case\u00efne hebben in plantaardige ingredi\u00ebnten, springt transglutaminase bij om die eiwitnetwerken te cre\u00ebren die kaas zijn snijdbare, houdbare textuur geven.   <\/p>\n<p>De hoeveelheid die we gebruiken is minuscuul &#8211; slechts 1% van het totale gewicht &#8211; en het is volkomen veilig als je het goed gebruikt. Behandel het gewoon zoals je elk ander keukeningredi\u00ebnt zou behandelen: adem het poeder niet in (het kan irriterend zijn), was je handen na gebruik, en bewaar het goed. Dat is alles.
