GROENTEFERMENTATIE?<\/h2><\/div><div class=\"fusion-text fusion-text-3 fusion-text-no-margin\" style=\"--awb-margin-bottom:20px;\"><p>Groentefermentatie is een vorm van melkzuurfermentatie: suikers in de groenten worden omgezet in melkzuur door melkzuurbacteri\u00ebn die van nature aanwezig zijn op je groenten. Dit melkzuur verlaagt de pH, remt ongewenste bacteri\u00ebn en zorgt voor zowel conservering als smaak. Deze bacteri\u00ebn doen meer dan alleen je groenten beschermen tegen bederf\u2014ze bouwen een heel nieuw smaakpalet op: frisser, zuurder, complexer. Je hoeft niets extra toe te voegen: melkzuurbacteri\u00ebn, suiker en vocht zitten allemaal al in je groenten. Harde groenten doen het meestal beter dan bladgroenten, hoewel uitzonderingen zoals paksoi zeker het proberen waard zijn. De vorm maakt niet veel uit: plakjes, blokjes, hele groenten\u2014het kan allemaal, zolang je maar rekening houdt met het vochtgehalte en de fermentatietijd. Ze concurreren om de beschikbare suikers en zuurstof. Om de juiste bacteri\u00ebn de overhand te geven, moet je twee dingen doen: Zout toevoegen en zuurstof buitenhouden. De meeste andere microben houden van zuurstof, dus die wil je buitensluiten. Dit kan op drie manieren:<br \/>\n<b>a) Fermenteren onder water:<\/b> Houd je groenten volledig ondergedompeld in hun eigen pekel of een toegevoegde pekel. Gebruik een gewicht om alles onder te houden.<br \/>\n<b>b) Waterslot:<\/b> Een pot met een waterslot laat gassen ontsnappen maar laat geen lucht binnen. Ideaal: je hoeft niet dagelijks te &#8220;burpen&#8221;, en schimmels maken geen kans. Een weckpot werkt trouwens oog goed, mits met beugel<br \/>\n<b>c) Vacu\u00fcmfermentatie:<\/b> Doe groenten en zout in een vacu\u00fcmzak, sluit deze af en je bent klaar.
