Je eigen augurken maken is veel eenvoudiger dan je denkt. En het mooiste is: echte augurken zijn gefermenteerde groenten, niet ingelegd in azijn maar op smaak gebracht door melkzuurbacteri\u00ebn. Bij augurken maken gaat het om melkzuurfermentatie. In dit proces zetten melkzuurbacteri\u00ebn de suikers in de komkommer om in melkzuur. Dit verlaagt de pH, voorkomt bederf en zorgt voor een frisse, complexe smaak. De schat-optie is eenvoudig: maak een 5% pekel (dus ongeveer 50 gram zout per liter) en dompel je augurken onder in deze pekel. Dit geeft je bij benadering het juiste zoutniveau. De bereken-optie is preciezer: (de komkommers + de hoeveelheid water nodig om ze onder te dompelen) * 2%. Dus, als je 500 gram komkommers en 500 gram water hebt = 1 kg. 2% van 1 kg = 20 gram. Zolang de groenten zelf onder de pekel zijn gebleven, worden ze beschermd door de anaerobe, zure omgeving. Schep simpelweg de schimmellaag van het oppervlak met een schone lepel.
