Hangop is misschien wel het meest onderschatte Nederlandse zuivelproduct. In essentie is het uitgelekte yoghurt of karnemelk, waarbij het waterige deel (de wei) wegvloeit en je een heerlijk dikke, romige massa overhoudt . De naam zegt het eigenlijk al: je hangt de yoghurt letterlijk op in een doek om het uit te laten lekken. hangop<\/h2><\/div><div class=\"fusion-text fusion-text-3 fusion-text-no-margin\" style=\"--awb-margin-bottom:20px;\"><p>Hangop ontstond ooit uit pure noodzaak. In een tijd zonder koelkasten was het redden van voedsel een dagelijkse uitdaging. Door yoghurt in een doek op te hangen, werd de vloeibare wei gescheiden van de vastere delen. Wat overbleef was niet alleen lekkerder, maar ook voedzamer en doordat het minder vocht bevatte, langer houdbaar.<\/p>\n<p>Al in de Gouden Eeuw was hangop populair. Mogelijk zien we het zelfs terug in Vermeer&#8217;s beroemde &#8220;Het Melkmeisje&#8221; &#8211; kunsthistorici denken dat de dienstmeid op het schilderij broodpap of, daar is &#8216;ie, een vroege vorm van hangop bereidt. Je gebruikt de zwaartekracht om de wei eruit te halen.<\/li>\n<li><strong>Kwark<\/strong> daarentegen is technisch gezien een verse kaas. Hierbij wordt stremsel aan de melk toegevoegd, waardoor de eiwitten direct gaan samenbinden tot een wrongel. Deze wrongel wordt vervolgens gesneden en uitgelekt.<\/li>\n<\/ul>\n<p>Het resultaat? Beide zijn dus uitgelekt en geconcentreerd, maar kwark is eigenlijk een kaas (in het Frans dan ook &#8216;Fromage frais of blanc&#8217;, verse of witte kaas), terwijl hangop yoghurt als basis heeft. Deze lekkernij wordt 24 tot 48 uur uitgelekt en krijgt zout toegevoegd tijdens het proces. Het resultaat is zo dik als roomkaas en wordt vrijwel alleen hartig gebruikt &#8211; als dip met olijfolie en za&#8217;atar, of als smeersel op platbrood. Het is niet meer vloeibaar, maar vaak gevormd tot stevige balletjes. Ook heel makkelijk zelf te maken dus. De smaak is milder en minder zuur dan hangop. De culturen voor skyr zijn wel anders dan die van kwark of yoghurt. Hangop bevat veel meer eiwit per 100 gram dan gewone yoghurt.
