Deze blog richt zich op de basisprincipes &#8211; het zou onmogelijk zijn om alle variaties in \u00e9\u00e9n artikel te behandelen. Maar om de diversiteit te illustreren:<\/p>\n<p class=\"whitespace-normal break-words\">Een Camembert wordt bijvoorbeeld niet geperst zoals harde kazen, maar krijgt in plaats daarvan een laagje Penicillium candidum schimmel die van buiten naar binnen rijpt. Een Munster of \u00c9poisses wordt daarentegen tijdens het rijpen regelmatig gewassen met Brevibacterium linens bacteri\u00ebn, wat zorgt voor die karakteristieke oranje korst en intense aroma. Blauwe kazen zoals Roquefort worden doorprikt met naalden zodat de Penicillium roqueforti schimmel zuurstof krijgt om te groeien. En binnen elke kaassoort zijn weer subtiele varianten.<\/p>\n<p class=\"whitespace-normal break-words\">Elk kaastype heeft zijn eigen specifieke technieken, temperaturen, culturen en rijpingstijden. MELK<\/h3><\/div><div class=\"fusion-text fusion-text-4\"><p>Melk is natuurlijk de basis van alle kaas. Voor consistente resultaten thuis gebruik je het beste volle melk uit de winkel die gepasteuriseerd is maar <em>niet<\/em> ultra-gepasteuriseerd, of gesteriliseerde (lang houdbare, of UHT), omdat UHT-melk geen goede wrongel zal vormen. Pasteurisatie beschadigt calcium, wat essentieel is voor stremming. Om dit te verhelpen voegen we <em>voedingsveilig calciumchloride<\/em> toe om de calciumbalans van de melk te herstellen en een stevige wrongel te garanderen. Je kunt ook rauwe melk gebruiken, dat werkt geweldig en is zeer smakelijk maar kan een klein risico met zich meebrengen.<\/p>\n<\/div><\/div><\/div><div class=\"fusion-layout-column Het bevat niet alleen chymosine maar een complex profiel van andere enzymen die kunnen bijdragen aan subtiele smaak- en textuurontwikkeling tijdens het rijpingsproces.<\/p>\n<p><b>Wat zijn vegetarisch en microbieel stremsel?<\/b><br \/>\nVoor wie op zoek is naar niet-dierlijke opties zijn er verschillende effectieve alternatieven, die vaak worden gegroepeerd onder de noemer &#8220;vegetarisch stremsel&#8221;.<\/p>\n<ul>\n<li><b>Microbieel Stremsel:<\/b><br \/>\nDit type wordt geproduceerd door het fermenteren van specifieke schimmel- of bacteriesoorten, zoals <i>Rhizomucor miehei<\/i>. Stap<\/h3><\/div><div class=\"fusion-text fusion-text-12\"><ol>\n<li><strong>Verhitten en Verzuren:<\/strong> Verwarm de melk voorzichtig tot 30-32\u00b0C. Langzaam, gelijkmatig verwarmen is essentieel om de melkeiwitten te beschermen. Roer zodra de temperatuur bereikt is de cultuur erdoor. Dek af en laat dit 30 minuten rijpen, zodat de bacteri\u00ebn hun werk kunnen beginnen.<\/li>\n<li><strong>Stremsel Toevoegen:<\/strong> Roer het calciumchloride erdoor, voeg dan het stremsel toe (verdund in een beetje koud water) en meng grondig met een op-en-neer beweging gedurende \u00e9\u00e9n minuut. Stop onmiddellijk met de beweging van de melk. Dek af en laat minstens een uur ongestoord staan, of tot je een gladde breuk krijgt &#8211; een schone scheur in de wrongel als je deze met een mes optilt.<\/li>\n<li><strong>Snij de Wrongel:<\/strong> Snij, als de wrongel gestold is, deze in gelijkmatige, erwt-grote stukjes (ongeveer 1 cm). Snij verticaal, horizontaal en diagonaal om kleine blokjes te maken. Laat de wrongel 5 minuten rusten.<\/li>\n<li><strong>Eerste Wassing:<\/strong> Verwijder voorzichtig ongeveer 45% van de totale massa (dus 45% van 4 l) wei. Voeg onder voorzichtig roeren langzaam heet water toe (ongeveer 55\u00b0C) tot de wrongeltemperatuur 35\u00b0C bereikt. Deze stap &#8220;wast&#8221; de wrongel door lactose te verwijderen, wat resulteert in een mildere, zoetere kaas. Roer voorzichtig gedurende 30 minuten. <strong>Verkort deze stap niet<\/strong>!<\/li>\n<li><strong>Afgieten en Persen:<\/strong> Laat de wrongel bezinken en giet dan alle wei af (bewaar het voor ricotta!). Breng de warme wrongel direct over in een met kaasdoek beklede vorm. Qua ingredi\u00ebnten heb je in ieder geval melk nodig met calciumchloride als vereiste als je supermarktmelk gebruikt. Starterculturen zorgen dat je kaas gaat fermenteren en smaak ontwikkelt. Voor een eerste keer kan eventueel een scheutje karnemelk ook wel. En verder zout: dat heb je al in huis.<\/p>\n<p>Vanaf hier kun het zo gek maken als je wilt. Wat is wrongel? Wrongel is de gel-achtige massa die ontstaat wanneer melk stremt tijdens het kaasmaken. Het zijn eigenlijk de melkeiwitten (vooral case\u00efne) die onder invloed van stremsel en zuur samenklitten tot een stevige, elastische structuur waarin vocht en vet gevangen zitten.\u00a0 Je kunt wrongel herkennen aan zijn karakteristieke witte tot lichtgele kleur en pudding-achtige consistentie. Wanneer je er met een mes doorheen snijdt, breekt het netjes &#8211; dit noemen kaasmakers een &#8220;gladde breuk&#8221;. De vloeistof die vrijkomt bij het snijden is de wei.<\/p>\n<p class=\"whitespace-normal break-words\">Wrongel is dus eigenlijk nog geen kaas, maar wel de bouwsteen ervan. Door deze massa te snijden, verhitten, uitdrukken, persen en te laten rijpen, ontstaat uiteindelijk kaas.
