Klaar. Maar welk stremsel je kiest maakt w\u00e9l verschil in textuur, smaak, gebruiksgemak en wat voor soort tofu je ermee kunt maken. Calciumsulfaat (gips): de alleskunner<\/h2><\/div><div class=\"fusion-text fusion-text-2 fusion-text-no-margin\" style=\"--awb-margin-bottom:20px;\"><p>Calciumsulfaat, ook wel gypsum of gewoon &#8220;tofu stremsel&#8221; genoemd, is verreweg het meest gebruikte coagulant ter wereld. En daar is een goede reden voor: het is heel makkelijk om mee te werken.<\/p>\n<p>Het poeder lost slecht op in water, en dat is juist het mooie eraan. Je maakt er een suspensie van in wat heet water, roert die door je sojamelk van 80\u201385 \u00b0C, en de stremming verloopt langzaam en gelijkmatig. Geen haast, geen paniek. De wrongel is fijn, egaal en veerkrachtig, precies wat je wilt voor een mooi blok tofu.<\/p>\n<p>De dosering ligt rond de 3\u20135 gram per liter sojamelk, oftewel ongeveer anderhalve theelepel per liter. De smaak is vrijwel neutraal met een heel lichte zoetheid, en het voegt ook nog eens calcium toe aan je tofu. Handig als je plantaardig eet.<\/p>\n<p>Belangrijk: gebruik altijd food-grade calciumsulfaat, nooit bouwgips of knutselgips. Dat bevat onzuiverheden die je niet in je eten wilt.<\/p>\n<p><a href=\"https:\/\/startercultures.eu\/nl\/product\/fermentation-nl\/bonen-granen-rijst-nl\/tofu-stremsel-nl\/\">Ons tofu stremsel (calciumsulfaat)<\/a> is food-grade en wordt geleverd met een recept. Nigari (magnesiumchloride): het Japanse origineel<\/h2><\/div><div class=\"fusion-text fusion-text-3 fusion-text-no-margin\" style=\"--awb-margin-bottom:20px;\"><p>Nigari is het traditionele Japanse tofustremsel, gewonnen uit zeewater na het kristalliseren van tafelzout. Het bestaat voornamelijk uit magnesiumchloride en werkt heel anders dan gypsum: het lost meteen op en reageert snel. Dat maakt het wat lastiger in gebruik. Je roertechniek en timing moeten goed zitten.<\/p>\n<p>De dosering is ongeveer 3 gram per liter sojamelk (als poeder of vlokken) of zo\u2019n 10 ml per liter (als vloeistof). Voeg het in twee porties toe, roer heel kort en zacht, en laat de boel 15 minuten met rust.<\/p>\n<p>De smaak is subtiel mineraal, soms omschreven als \u201cumami-achtig\u201d, maar bij overdosering wordt het bitter. Het woord <em>nigari<\/em> komt niet voor niks van het Japanse <em>nigai<\/em>: bitter. Goed doseren is dus essentieel.<\/p>\n<p>Nigari is verkrijgbaar bij toko\u2019s en sommige reformwinkels. GDL (glucono-delta-lacton): voor silken tofu<\/h2><\/div><div class=\"fusion-text fusion-text-4 fusion-text-no-margin\" style=\"--awb-margin-bottom:20px;\"><p>GDL is een wit poeder dat van nature voorkomt in honing en fruit. GDL zelf is niet zuur, maar zodra je het oplost in warm water, hydrolyseert het langzaam naar gluconzuur. Die geleidelijke pH-daling zorgt ervoor dat je sojamelk niet uitvlokt in wrongel, maar als geheel stolt tot een gladde, puddingachtige gel.<\/p>\n<p>Dit is hoe vrijwel alle commerci\u00eble silken tofu wordt gemaakt, en het is thuis de enige manier om dat zijdezachte resultaat te bereiken. Je gebruikt 1 tot 1,5 gram per 100 gram droge sojabonen, lost het op in de sojamelk, giet het in een vorm, en houdt het 45 minuten op 80\u201390 \u00b0C (in een waterbad of stoomoven). Niet roeren, niet persen.
