kombucha?<\/h2><\/div><div class=\"fusion-text fusion-text-2 fusion-text-no-margin\" style=\"--awb-margin-bottom:20px;\"><p>Kombucha is een gefermenteerde theedrank, waarschijnlijk ooit ontstaan in Oost-Azi\u00eb. De exacte oorsprong is onbekend. Je maakt het door zoete thee te laten fermenteren met een combinatie van bacteri\u00ebn en gisten. Die samenwerking heet een SCOBY: Symbiotic Culture of Bacteria and Yeast. De melkzuurbacteri\u00ebn, azijnzuurbacteri\u00ebn en gisten zetten de suiker om in zuren, een beetje alcohol en koolzuurgas. Dat levert een drankje op dat fris-zuur smaakt, licht prikt, en waar je heel veel kanten mee op kunt.<\/p>\n<p>Tijdens de fermentatie vormt zich bovenop de vloeistof een geleiachtige schijf van cellulose. Vrijwel iedereen noemt die schijf &#8220;de scoby&#8221;, maar technisch heet hij de pellicle of biofilm. Vaak wordt hij ook liefkozend de &#8216;kwal&#8217; genoemd. De echte SCOBY is het geheel: de vloeistof \u00e9n de pellicle samen. Los 50-100 gram suiker per liter op in de hete thee.<\/li>\n<li>Laat de zoete thee volledig afkoelen tot kamertemperatuur. Te hete thee doodt de micro-organismen in je starter.<\/li>\n<li>Zorg dat je glazen pot schoon is. Spoel hem vooraf goed om met heet water.<\/li>\n<li>Giet de afgekoelde thee in de pot. Voeg circa 10% oude kombucha toe (dus 100 ml op 1 liter) samen met de pellicle.<\/li>\n<li>Dek de pot af met een doek en zet die vast met een elastiekje. Gebruik geen deksel: de fermentatie heeft zuurstof nodig.<\/li>\n<li>Zet de pot op een plek op kamertemperatuur of iets warmer (20-30\u00b0C), uit direct zonlicht. Hogere temperaturen versnellen de fermentatie en maken het resultaat zuurder.<\/li>\n<li>Laat 7 tot 14 dagen fermenteren. Proef na een week regelmatig met een schone lepel. Fris-zuur en niet meer te zoet? Dan is het klaar.<\/li>\n<li>Optioneel: meet de pH. Die moet onder 4,6 liggen. Bovendien is het merendeel van de kombucha in de supermarkt gepasteuriseerd. Controleer altijd het etiket, want gepasteuriseerde kombucha bevat geen levende culturen meer en werkt dus niet als starter. De gisten zetten de restsuiker om in koolzuurgas.<\/li>\n<li>Zet de fles daarna in de koelkast om de druk te stabiliseren. Bewaar je scoby in een afgesloten pot met wat kombucha in de koelkast. Onderzoek van Leandra Brandwijk (Hogeschool Leiden, 2022) laat zien dat de koelkast de beste plek is om je scoby langere tijd te bewaren: het microbioom blijft stabiel en de scoby herstelt goed als je weer begint.
