(bacteri\u00ebn, gisten of schimmels) is veranderd. Die micro-organismen zetten suikers en andere bestanddelen om in stoffen als melkzuur, alcohol of azijnzuur. Dat klinkt misschien niet erg appetijtelijk, maar de resultaten eet je bijna elke dag: yoghurt, kaas, bier, wijn en zuurkool zijn allemaal gefermenteerde producten.<\/p>\n<p>Fermenteren is niet nieuw. Al duizenden jaren wordt het toegepast, lang voor de uitvinding van de koelkast, om voedsel langer houdbaar te maken. Waarschijnlijk heb je vanochtend al iets gefermenteerds gegeten. Een boterham met kaas? Gefermenteerd. Yoghurt bij het ontbijt? Gefermenteerd. Koffie? Gefermenteerd. Zelfs chocolade is gefermenteerd.<\/p>\n<p><b>Zuivel:<\/b> <a href=\"https:\/\/startercultures.eu\/nl\/product-category\/fermentation-nl\/zuivel-ook-vegan-nl\/yoghurt-nl\/yoghurt-starters-nl\/\">yoghurt<\/a>, <a href=\"https:\/\/startercultures.eu\/nl\/melkkefir-wat-is-het-en-hoe-maak-je-het-inclusief-recept\/\">kefir<\/a>, kwark, karnemelk en kaas. De melkzuurbacteri\u00ebn in deze producten zetten lactose (melksuiker) om in melkzuur, wat zorgt voor die typische zure smaak en dikke structuur.<\/p>\n<p><b><a href=\"https:\/\/startercultures.eu\/nl\/product-category\/fermentation-nl\/groente-nl\/\">Groenten<\/a>:<\/b> zuurkool, kimchi, augurken en andere gepekelde groenten. Let op: echte gefermenteerde groenten zijn niet hetzelfde als groenten die in azijn zijn ingelegd. Bij fermentatie ontstaat het zuur op natuurlijke wijze door melkzuurbacteri\u00ebn.<\/p>\n<p><b>Dranken:<\/b> bier, wijn, <a href=\"https:\/\/startercultures.eu\/nl\/product\/frisdrank-nl\/gegarandeerd-veilig-komboecha-pakket-nl\/\">kombucha<\/a> en <a href=\"https:\/\/startercultures.eu\/nl\/waterkefir-maken\/\">waterkefir<\/a>. Kombucha is een gefermenteerde theedrank, waterkefir een gefermenteerde frisdrank op basis van suikerwater. Beide zijn bruisend en fris.<\/p>\n<p><b>Brood:<\/b> zuurdesembrood wordt gerezen met behulp van een mix van wilde gisten en melkzuurbacteri\u00ebn, in plaats van bakkersgist uit een pakje.<\/p>\n<p><b>Soja en bonen:<\/b> tempeh, <a href=\"https:\/\/startercultures.eu\/nl\/product-category\/koji-nl\/koji-starters-nl\/\">miso, sojasaus<\/a> en natto. Dit zijn stuk voor stuk gefermenteerde sojaproducten die al eeuwen in de Aziatische keuken worden gebruikt.<\/p>\n<p><b>Verrassingen:<\/b> koffie, thee en chocolade. Recente grote onderzoeksanalyses (uit 2025 en 2026) laten zien dat mensen die regelmatig gefermenteerd eten een betere stoelgang hebben, minder last van een opgeblazen gevoel, en minder winderigheid. Dat is geen spectaculair nieuws, maar het is wel solide bewezen.<\/p>\n<p>Ook bij lactose-intolerantie biedt fermentatie betrouwbare hulp. De melkzuurbacteri\u00ebn in <a href=\"https:\/\/startercultures.eu\/nl\/product-category\/zuivel-ook-vegan-nl\/yoghurt-nl\/\">yoghurt<\/a> en kefir breken een groot deel van de lactose in de melk af. Veel mensen die geen gewone melk verdragen, kunnen yoghurt of kefir prima eten.<\/p>\n<h3>Wat is waarschijnlijk<\/h3>\n<p>Dan zijn er bescheiden aanwijzingen dat gefermenteerde zuivel, met name yoghurt, samenhangt met een lager risico op diabetes type 2 en hart- en vaatziekten. Die resultaten komen vooral uit grote bevolkingsstudies. Dat is hoopgevend, maar het is nog geen hard bewijs. Mensen die veel yoghurt eten, leven vaak ook op andere manieren gezonder, waardoor het moeilijk is om te bepalen of de yoghurt zelf het verschil maakt.<\/p>\n<h3>Wat weten we nog niet<\/h3>\n<p>En dan zijn er de claims die je vaak online tegenkomt: gefermenteerd eten zou je immuunsysteem versterken, je hersenen beschermen en zelfs kanker voorkomen. De werkelijkheid is dat het wetenschappelijk bewijs hiervoor op dit moment nog erg dun is. Veel van deze claims zijn gebaseerd op dierproeven of laboratoriumstudies, niet op onderzoek bij mensen. De Europese voedselautoriteit (EFSA) weigert dan ook structureel om gezondheidsclaims op basis van dit soort bewijs goed te keuren.<\/p>\n<p>Nog iets om te weten: niet alle gefermenteerde producten bevatten nog levende bacteri\u00ebn op het moment dat je ze eet. Supermarktkombucha is vrijwel altijd gepasteuriseerd (verhit), waardoor de bacteri\u00ebn zijn gedood. Wil je levende bacteri\u00ebn? Die bacteri\u00ebn helpen mee bij het verteren van voedsel en houden schadelijke bacteri\u00ebn in toom. Zie ze als een versterking voor het ecosysteem in je darmen.<\/li>\n<li>Die micro-organismen produceren tijdens de fermentatie allerlei nuttige stoffen. Melkzuur is de bekendste, maar er ontstaan ook vitamines (vooral B-vitamines en vitamine K), korte-keten vetzuren die als voeding dienen voor je darmcellen, en bioactieve peptiden met een mild bloeddrukverlagend effect.<\/li>\n<li>Fermentatie breek bepaalde stoffen af die anders de opname van voedingsstoffen blokkeren. Fytinezuur in granen en peulvruchten, bijvoorbeeld, bindt zich aan mineralen als ijzer en zink en voorkomt dat je lichaam ze opneemt. Het is ontzettend leuk om te doen en je kunt er al je creativiteit in kwijt. Begin met iets simpels: een potje <a href=\"https:\/\/startercultures.eu\/nl\/product-category\/zuivel-ook-vegan-nl\/yoghurt-nl\/\">yoghurt met een startercultuur<\/a> (in 6 uur al klaar), <a href=\"https:\/\/startercultures.eu\/nl\/product-category\/fermentation-nl\/groente-nl\/\">zuurkool<\/a> dat niets meer nodig heeft dan kool en zout, of een glas <a href=\"https:\/\/startercultures.eu\/nl\/waterkefir-maken\/\">waterkefir<\/a>.<\/p>\n<p>Het onderzoek zien dat de gezondheidseffecten veel sterker zijn voor ambachtelijk geproduceerde producten dan voor de industri\u00eble variant ervan, bijvoorbeeld in het geval van melkkefir.
