Als je zout toevoegt en de kool afsluit van zuurstof, gaan die bacteri\u00ebn aan het werk: ze zetten suikers om in melkzuur. Dat melkzuur verlaagt de zuurgraad (pH) van je kool tot een niveau waarop bederf- en ziekmakende bacteri\u00ebn niet meer kunnen groeien. Daardoor bederft je kool niet meer. Het is een van de slimste conserveermethodes die de mensheid heeft verzonnen.<\/p>\n<p>Maar er gebeurt meer dan alleen conserveren. Dezelfde bacteri\u00ebn produceren ook aroma&#8217;s, koolzuurgas en tientallen andere verbindingen die van een tamelijk saaie witte kool iets compleet nieuws (en lekkers) maken. Zuurkool smaakt niet naar kool met zuur erbij, het smaakt naar zuurkool. Dat zijn twee verschillende dingen.<\/p>\n<p>De bacteri\u00ebn, de suikers en het vocht: alles wat je nodig hebt zit al in je kool. Je hoeft het alleen maar de juiste omstandigheden te geven. Hij bevat voldoende water, nodig om de zuurkool tijdens de fermentatie onder een pekel te zetten. Snijd hem zo fijn mogelijk: dunne reepjes geven meer smaak en een mooiere textuur. Een <a href=\"https:\/\/startercultures.eu\/nl\/product\/fermentation-nl\/groente-nl\/vegetable-tools-nl\/houten-groente-schaaf-mandoline\/\">houten groenteschaaf<\/a> maakt dit werk een stuk aangenamer en sneller.<\/p>\n<p>Spitskool is de perfecte beginnersgroente. In tegenstelling tot wat je misschien verwacht, bevat spitskool juist veel vocht dat je met een geringe hoeveelheid kneden of stampen al onttrekt. De smaak is iets milder en zoeter dan die van witte kool.<\/p>\n<p>Andere koolsoorten zoals rode kool of savooiekool zijn prima te fermenteren. Het zuur doet het eigenlijke conserveerwerk. Zout geeft de melkzuurbacteri\u00ebn een voorsprong: die tolereren zout beter dan de meeste andere micro-organismen. Door de juiste hoeveelheid zout toe te voegen, slaan de slechte jongens (gisten, schimmels, bederf- en ziekmakende bacteri\u00ebn) op de vlucht zodat de melkzuurbacteri\u00ebn ongehinderd hun werk kunnen doen.<\/p>\n<p>De juiste hoeveelheid is 2%, dus 20 gram per kilogram kool. Dat is geen arbitrair getal: onder de 2% is de remming te weinig en krijgen gisten en andere bacteri\u00ebn hun kans, wat leidt tot papperige textuur, vreemde smaken en soms ronduit gevaarlijke situaties. Boven de 3% rem je ook de melkzuurbacteri\u00ebn zelf, komt de fermentatie traag of helemaal niet op gang, en wordt het eindresultaat gewoon erg zout.<\/p>\n<p>Weeg het zout altijd af. Je leest overal dat je per se ongejodeerd zeezout moet gebruiken. Het idee is dat jodium antibacterieel werkt en de fermentatie verstoort. In praktijk is de hoeveelheid jodium in normaal keukenzout zo klein dat het effect verwaarloosbaar is. Dit is de meest gebruikte methode en geeft goede resultaten.<\/p>\n<p>Onder 10\u00b0C, bijvoorbeeld in een kelder of koele berging, gaat het veel langzamer: zes tot acht weken of langer. Bij koudere temperaturen kan het zes tot acht weken duren.<\/p>\n<p>Je weet dat hij klaar is als hij lekker smaakt (dit is altijd het voornaamste criterium), als de gasvorming gestopt of vrijwel gestopt is, als de pH onder de 4,6 ligt (als je dat wilt meten), en als er bij kamertemperatuur minimaal twee weken verstreken zijn.<\/p>\n<p>Zet de zuurkool daarna in de koelkast. Daar stopt de fermentatie vrijwel. In de koelkast blijft zuurkool maandenlang goed, zolang de kool onder de pekel blijft staan. Reden tot paniek? Nee.<\/p>\n<p><strong>Witte waas of witte vlokjes<\/strong> op het oppervlak zijn vrijwel altijd kahmgist: een gist die zich graag op het grensvlak van vloeistof en lucht vestigt. Kahmgist is niet schadelijk, maar de smaak kan er licht bitter of gistig van worden als je het laat zitten. Schep het zo snel mogelijk weg met een schone lepel, zorg dat de kool weer volledig onder de pekel staat, en ga door.<\/p>\n<p><strong>Echte schimmel<\/strong> is een ander verhaal. Groen, zwart of roze schimmel die ook in de kool zelf doorgroeit: gooi weg en begin opnieuw.
