Het zit vooral in melk, melkproducten, kaas, vis, vlees, peulvruchten en volkoren producten. Als additief zijn ze bekend onder\u00a0difosfaten (E450), trifosfaten (E451) en polyfosfaten (E452).<\/p>\n<h3>Voordelen van het gebruik van fosfaat in worst<\/h3>\n<p>Fosfaat is het ideale hulpmiddel voor de binding voor alle verse en gare worsten. H\u00e9t geheim van de sappige slagersworst. Je slager vertelt het je niet, maar hij stopt gegarandeerd fosfaten in zijn worsten. Fosfaat is een geweldig hulpje voor sappigheid, binding en snijbaarheid. Fosfaat be\u00efnvloedt de waterbinding van vlees op verschillende niveaus. Hierdoor dragen ze bij aan de structuur en textuur.<\/p>\n<h3>Hoe gebruik je fosfaat?<\/h3>\n<p>Voeg een dosering van 2-3\u00a0gram per kilo vlees toe.
