Het wordt gemaakt van sojaschroot dat over is na het bereiden van <a href=\"https:\/\/www.starterculturen.nl\/a-52583979\/bonen-granen-rijst\/tofu-stremsel\/\" target=\"_blank\" rel=\"noopener noreferrer\">sojamelk en\/of tofu.<\/a> Er bestaan twee varianten: black en red oncom. Die eerste lijkt op tempeh en wordt gefermenteerd met\u00a0<em>Rhizopus oligosporus. <\/em>Red oncom\u00a0 maakt men met\u00a0<em>Neurospora intermedia var. oncomensis. <\/em>Deze starter is bedoeld voor Black oncom. Andere bronnen voor oncom zijn de restanten van tapiocameelmaling of pindapersing.<\/p>\n<p><a href=\"https:\/\/books.google.nl\/books?id=hdKzFlaqWT8C&amp;pg=PA205&amp;lpg=PA205&amp;dq=onchom+appendix+H&amp;source=bl&amp;ots=-E65fCugk9&amp;sig=7P2XUb6DCh-YKY5WpWTAmV1POu4&amp;hl=en&amp;sa=X&amp;ei=5BgDT8j9D8jf0QH7wty5Dw&amp;redir_esc=y#v=onepage&amp;q=onchom%20appendix%20H&amp;f=false\" target=\"_blank\" rel=\"noopener noreferrer\">Hier kun je meer lezen over oncom<\/a> (Engels, Google books).\u00a0In\u00a0<a href=\"https:\/\/www.starterculturen.nl\/a-52122580\/boeken\/over-rot-2015-het-handboek-fermenteren\/\" target=\"_blank\" rel=\"noopener noreferrer\">Over Rot (2015)<\/a>\u00a0vind je informatie over vele tientallen andere gefermenteerde voedingsmiddelen.<\/p>\n<h3>Wat is het verschil tussen zwarte oncom en tempeh<\/h3>\n<p>Black oncom is gerelateerd aan tempeh. Het verschil is echter dat oncom klaar is nadat de schimmel sporen heeft geproduceerd, terwijl tempeh gebruikt wordt voordat de schimmel sporen produceert, vandaar ook het kleurverschil. Ook wordt Black oncom meestal gemaakt van &#8216;gebruikte&#8217; sojabonenpulp (okara), in plaats van de hele sojaboon.<\/p>\n<h3>Inhoud oncom starter<\/h3>\n<ul>\n<li>20 gram, genoeg voor ca. 4 \u00e0 5 kg black oncom.<\/li>\n<li>Ingredi\u00ebnt: black Oncom starter (<em>Rhizopus oligosporus<\/em>) en rijstebloem.<\/li>\n<li>Bewaarinstructies: in de koelkast minimaal 6 maanden houdbaar,\u00a0 meer dan een jaar in de vriezer.<\/li>\n<li>Afkomst: Indonesi\u00eb.<\/li>\n<li>Allergenen: soja<\/li>\n<\/ul>\n<h3><strong>Hoe maak ik zelf black oncom?<\/strong><\/h3>\n<p><strong>Benodigdheden<\/strong><\/p>\n<ul>\n<li>Zeef<\/li>\n<li>Schone zakdoek<\/li>\n<li>Staafmixer\/blender<\/li>\n<li>Een ziploc<\/li>\n<li>Een warme plek waar het 25-35 \u00b0C is (oven, dekbed met elektrische deken, multifunctionele fermentatiekast of de bak die je ook gebruikt voor koji).<\/li>\n<li>Thermometer<\/li>\n<li>Vork of speld<\/li>\n<\/ul>\n<p><strong>Ingredi\u00ebnten\u00a0<\/strong><\/p>\n<ul>\n<li>200\u00a0gram droge sojabonen (toko, of Turkse supermarkt)<\/li>\n<li>1 gram<em>\u00a0Black oncom starter<\/em><\/li>\n<li>15 ml azijn<\/li>\n<\/ul>\n<p><strong>Bereiding oncom starter<\/strong><\/p>\n<ul>\n<li>Laat de sojabonen een nacht weken in water.<\/li>\n<li>Giet af en voeg circa 1 tot 1,4 liter vers water toe. Pureer de sojabonen met het water met een staafmixer.<\/li>\n<li>Knijp uit.<\/li>\n<li>Gebruik de sojamelk om te drinken, of <a href=\"https:\/\/www.starterculturen.nl\/a-52583979\/bonen-granen-rijst\/tofu-stremsel\/\" target=\"_blank\" rel=\"noopener noreferrer\">om tofu van te maken<\/a>.<\/li>\n<li>Kook het sojabonenschroot met wat water zachtjes gedurende ongeveer 5-10 minuten.<\/li>\n<li>Laat afkoelen.<\/li>\n<li>Verzuur de bonenschroot door het te mengen met de azijn.<\/li>\n<li>Ent de bonen met ca. 1 gram startercultuur. Meng de schimmel zeer goed door de bonen.<\/li>\n<li>Pak de bonen strak, maar niet t\u00e9,\u00a0in een plastic zakje, plastic disposable of anderszins en prik daar met een vork elke paar centimeter gaten in. De schimmel heeft namelijk zuurstof nodig, maar ook weer niet te veel.<\/li>\n<li>Laat warm beschimmelen, elke temperatuur tussen de ca. 25 en 35 \u00b0C is prima.
