De Bulgaren zijn er van overtuigd dat hun yoghurt de beste ter wereld is. Zo&#8217;n 400.000 ton (!) wordt elk jaar in het land geconsumeerd. Deze Bulgaarse starter &#8211; gemaakt door de voormalig staatszuivelfabriek van Bulgarije &#8211; maakt authentieke Bulgaarse yoghurt (<em>kiselo mlyako<\/em>) met een klassieke Bulgaarse yoghurtsmaak, -dikte, -zuurgraad en -aroma. Zie hieronder voor details.<\/p>\n<h3>Inhoud<\/h3>\n<ul>\n<li>2 gram <em>heirloom <\/em>thermofiele Bulgaarse yoghurt starter.<\/li>\n<li>Ingredi\u00ebnten: melkpoeder, yoghurt starterculturen<\/li>\n<li>1 zakje is genoeg voor 4 liter yoghurt.<\/li>\n<li>De starter is volledig natuurlijk, zonder conserveermiddelen, additieven, kunstmatige kleuren of smaken. Het bevat geen GMO-ingredi\u00ebnten en het is glutenvrij.<\/li>\n<li>Geproduceerd in Bulgarije.<\/li>\n<\/ul>\n<h3>Micro-organismen in onze authentieke Bulgaarse yoghurt starter<\/h3>\n<p><em>Lactobacillus delbrueckii sub\u00a0bulgaricus<\/em> (vaak eenvoudigweg <em>Lactobacillus bulgaricus<\/em> genoemd) en <em>Streptococcus salivarius sub\u00a0thermophilus<\/em> (vaak afgekort tot <em>Streptococcus thermophilus<\/em>).\u00a01 gram starter bevat meer dan 25 miljard kve melkzuur probiotische bacteriestammen<em>.<\/em><\/p>\n<h3>Bewaarinstructies<\/h3>\n<p>In de vriezer. Bewaar de yoghurtstarter ook na gebruik in de vriezer in een Ziploc-zak, of gevacumeerd. De starter is zeer hydrofiel &#8211; als er vocht in het pakje komt, zal de kwaliteit achteruit gaan. Houdbaarheid is 2 jaar in de vriezer.<\/p>\n<h3>Meer leren over fermenteren?<\/h3>\n<p>\u200bLees\u00a0<a href=\"https:\/\/www.starterculturen.nl\/a-52122580\/boeken\/over-rot-2015-het-handboek-fermenteren\/\">Over Rot<\/a>, of volg een\u00a0<a href=\"https:\/\/wateetons.com\/wateetons-workshops\/category\/fermenteren\/\">workshop,<\/a>\u00a0ook voor bedrijven en instellingen!<\/p>\n<h3>Hoe maak je Bulgaarse yoghurt?<\/h3>\n<p>Je kunt elke gewenste melk gebruiken &#8211; koeien, schapen, geiten, magere melk, volle melk, rauw, gepasteuriseerd, gesteriliseerd, het werkt altijd! Het kan uiteraard in een yoghurtmaker, maar zonder lukt het ook prima. Je kunt zelfs kokosmelk gebruiken, maar zult dan wel een verdikkingsmiddel moeten toevoegen.<\/p>\n<p><strong>Ingredi\u00ebnten voor 1 liter<\/strong><\/p>\n<ul>\n<li>1\u00a0\u00a0liter melk<\/li>\n<li>1\/4e theelepel Bacillus Bulgaricus yoghurt starter<\/li>\n<\/ul>\n<p><strong>Stappen<\/strong><\/p>\n<ol>\n<li>Verhit de melk kort tot ca 90 \u00b0 C. Dit om eventueel aanwezige bacteri\u00ebn te doden, die kunnen reageren met de <em>Lactobacillus Bulgaricus<\/em>. Bovendien zorgt het voor een stevigere structuur. Blijf roeren zodat de melk niet verbrandt. Als je gesteriliseerde melk gebruikt is dit niet nodig.<\/li>\n<li>Koel af tot 43 \u00b0 C. De eenvoudigste manier om de juiste temperatuur te testen, is door je pink in de melk te steken &#8211; als je comfortabel tot 5 kunt tellen, dan is de melk precies goed. Een thermometer gebruiken kan natuurlijk ook.<\/li>\n<li>Voeg 1\/4e theelepel starter toe en roer zeer goed.<\/li>\n<li>Giet de melk over in de fles(sen) of pot(ten) waarin je het wilt fermenteren. Bedek de containers losjes met een deksel. Sluit het niet luchtdicht.<\/li>\n<li>Houd de containers zo goed mogelijk op temperatuur. Wikkel ze goed in dekens\/dekbed, bedek ze met een theemuts, zet ze sous vide, in een thermoskan of in een instant pot met yoghurtstand en laat ze rusten.<\/li>\n<li>Na een uur of 5-6 is de yoghurt klaar. Check of hij voldoende stevig is. Eventueel moet hij nog een paar uur langer. Voor een dichtere yoghurt met een meer zure en scherpe smaak kun je het langer laten staan \u200b\u200b(bijvoorbeeld &#8216;s nachts).<\/li>\n<li>Voor het beste resultaat verplaats je de yoghurt een paar uur naar de koelkast voordat je het opeet &#8211; het wordt een beetje steviger en lekkerder!<\/li>\n<\/ol>\n<h3>Tip<\/h3>\n<p>Soms heeft een gedroogde yoghurtstarter een tweede &#8216;fermentatieronde&#8217; nodig om zijn volledige potentieel te benutten. Dit betekent dat je een lepel van de eerste batch moet gebruiken om een tweede te starten.
