Het heeft wel wat weg van melkkefir, anderen vinden hem op iets tussen cottage cheese en yoghurt lijken. Het heeft een vrij milde, licht scherpe smaak. Met deze startercultuur maak je zelf je eigen amasi.<\/p>\n<h3>Mesofiel of thermofiel<\/h3>\n<p>Amasi is een yoghurt die niet zo moeilijk doet en kan zowel mesofiel (kamertemperatuur) als thermofiel (warm, 35+ graden) bereid worden. Elk geeft een eigen resultaat.<\/p>\n<p>Als gefermenteerde melkcultuur heeft het veel voordelen voor de gezondheid, waaronder levende probiotica en gemakkelijk verteerbare voedingsstoffen uit de melk (inclusief lactose).<\/p>\n<h3>Ook wel bekend als<\/h3>\n<ul>\n<li>Maas<\/li>\n<li>Amasai<\/li>\n<\/ul>\n<h3><strong>Geen yoghurtmaker nodig<\/strong><\/h3>\n<p>Deze yoghurt maak je op kamertemperatuur, geen yoghurtmaker of iets dergelijks is nodig. Het kan gewoon op het aanrecht. Maar het kan ook in een yoghurtmaker<\/p>\n<h3><strong>Inhoud<\/strong><\/h3>\n<ul>\n<li>1 gram heirloom amasi mesofiele droge yoghurt starter<\/li>\n<li>Genoeg voor de rest van je leven<\/li>\n<li>Geproduceerd in de UK<\/li>\n<li>Allergenen: melk<\/li>\n<\/ul>\n<h3><strong>Micro-organismen in amasi yoghurt startercultuur\u00a0<\/strong><\/h3>\n<p>Melkzuurbacteri\u00ebn: <em>Lactococcus<\/em>, verder verschillende soorten <em>Lactobacillus<\/em>, <em>Leuconostoc <\/em>en <em>Enterococcus,\u00a0Acinetobacter<\/em>, <em>Aeromonas <\/em>en geslachten binnen de <em>Enterobacteriaceae<\/em>.<\/p>\n<h3><strong>Waarom een gedroogde amasi yoghurt startercultuur?<\/strong><\/h3>\n<ul>\n<li>Gedroogde starters zijn lang houdbaar.<\/li>\n<li>Makkelijk te verschepen\/mee te nemen, ook naar het buitenland.<\/li>\n<li>Gaan niet achteruit door vervoer.<\/li>\n<li>Licht in gewicht (verzendkosten).<\/li>\n<li>Je kunt ze al aanschaffen, ook als je niet direct die week van plan bent yoghurt te maken.<\/li>\n<li>Je kunt een deel achter de hand houden voor het geval je verse yoghurt slechter van kwaliteit wordt.<\/li>\n<li>Na het activeren is de werking van gedroogde yoghurt als starter identiek aan verse yoghurt.<\/li>\n<\/ul>\n<h3><strong>Bewaarinstructies<\/strong><\/h3>\n<p>In de koelkast of vriezer. Bewaar de yoghurtstarter ook na gebruik in de vriezer in een Ziploc-zak, of gevacumeerd. De starter is zeer hydrofiel &#8211; als er vocht in het pakje komt, zal de kwaliteit achteruit gaan. Houdbaarheid minstens een jaar in de vriezer, maar in de praktijk langer.<\/p>\n<h3><strong>Meer leren over fermenteren? <\/strong><\/h3>\n<p>\u200bLees\u00a0<a style=\"color: #892a26 !important; box-sizing: border-box; line-height: inherit; max-width: 100%;\" href=\"https:\/\/www.starterculturen.nl\/a-52122580\/boeken\/over-rot-2015-het-handboek-fermenteren\/\">Over Rot<\/a>, of volg een\u00a0<a style=\"color: #892a26 !important; box-sizing: border-box; line-height: inherit; max-width: 100%;\" href=\"https:\/\/wateetons.com\/wateetons-workshops\/category\/fermenteren\/\">workshop,<\/a>\u00a0ook voor bedrijven en instellingen!<\/p>\n<h3><strong>Het activeren van je starter<\/strong><\/h3>\n<ol>\n<li>Leeg het pakket startercultuur in een schone pot.\u00a0Crush de vlokken wat fijner met een schone vork of lepel.<\/li>\n<li>Giet een half glas gesteriliseerde (houdbare) melk over de starter, roer goed en laat een paar minuten rusten om te rehydrateren .<\/li>\n<li>Roer weer zeer goed totdat\u00a0alle stukjes opgelost zijn. Dit duurt soms even.<\/li>\n<li>Dek af met een stuk keukenrol of zakdoek, vastgezet met een elastiekje.<\/li>\n<li>Laat 48 uur rijpen bij\u00a0kamertemperatuur of ietsje warmer. Zodra het verdikt of na 48 uur, verplaats het naar de koelkast en laat een uur of 6 terugkoelen.<\/li>\n<li>Het is mogelijk dat de yoghurt op dit moment nog\u00a0wat dun is. Dat geeft niet.\u00a0De consistentie zal verbeteren in de volgende paar batches.<\/li>\n<li>Voeg de starter toe aan een liter gesteriliseerde (houdbare) melk en roer goed.<\/li>\n<li>Dek af met een stuk keukenrol of zakdoek, vastgezet met een elastiekje.<\/li>\n<li>Laat 12 tot 48 uur bij kamertemperatuur fermenteren.\u00a0 Afhankelijk van de temperatuur en je starter kan het 48 uur duren voordat de yoghurt volledig is gefermenteerd.<\/li>\n<li>Laat ca. 6 uur in de koelkast terugkoelen.<\/li>\n<li>Deze yoghurt kun je nu direct eten, en een beetje bewaren voor een volgende batch of, en dat heeft de voorkeur, in ijsklontzakjes invriezen als \u2018moederstarter\u2019. Elk ijsklontje is weer een starter voor een liter melk.<\/li>\n<\/ol>\n<h3>Tip:<\/h3>\n<ul>\n<li>Amasi is een yoghurt die niet zo moeilijk doet en kan zowel mesofiel (kamertemperatuur) als thermofiel (warm, 35+ graden) bereid worden.
