Ze zorgen voor veiligheid doordat ze je worst verzuren, en geven de kenmerkende gerijpte smaak aan je worst. Je gebruikt ze altijd samen met nitrietpekelzout, dextrose en soms met salpeter.<\/p>\n<h3>Over Bactoferm SafePro B-2 (Lactobacillus sakei) startercultuur<\/h3>\n<p>B-2 is een kweek met \u00e9\u00e9n stam die <em>Lactobacillus sakei<\/em> bevat in een gevriesdroogde vorm. L. sakei kan de groei van bederf en pathogene bacteri\u00ebn onderdrukken\u00a0zoals inheemse melkzuurbacteri\u00ebn en <em>Listeria monocytogenes<\/em>. <em>L. sakei <\/em>groeit binnen een breed temperatuurbereik tot 2 \u00b0 C (35 \u00b0 F) en overleeft bevriezing.<\/p>\n<h3>Doel<\/h3>\n<p>B-2 wordt aanbevolen voor biologische bescherming van gekookte of gezouten vleesproducten, vacu\u00fcmverpakt of verpakt in gemodificeerde atmosfeer. Het geeft dus een extra veiligheid.<\/p>\n<h3>Sinusitis<\/h3>\n<p><em>Lactobacillus sakei <\/em>wordt soms gebruikt door mensen die last hebben van sinusitis. Wij kunnen voor het gebruik als medische toepassing geen enkele verantwoordelijkheid dragen. Een pittige chorizo, een mooie salami of harde Drentse kosterworst, allemaal zijn ze verrukkelijk.
