Het komt in citrusvruchten voor en is een natuurlijk conserveermiddel en antioxidant. Daarnaast wordt het gebruikt om een zure smaak aan voedsel te geven. Het is een voedingszuur met E-nummer E330. Ook mensen maken citroenzuur aan en zetten dit weer om. Vooral\u00a0citrusvruchten\u00a0bevatten citroenzuur. Het werd vroeger vooral gewonnen uit citrusvruchten, maar het wordt tegenwoordig vooral gewonnen uit suiker met behulp van bepaalde\u00a0schimmels, zoals\u00a0<i>Aspergillus niger<\/i>.<\/p>\n<h3>Waarvoor gebruik je citroenzuur?<\/h3>\n<p>Citroenzuur kent zeer veel toepassingen. Het is een natuurlijk conserveermiddel en antioxidant. In de kaasmakerij wordt het veel gebruikt, onder andere om makkelijk zelf mozzarella te maken en in de bereiding van vegan kazen. Ook paneer en sommige geitenkazen worden gestremd met behulp van citroenzuur.<\/p>\n<h3>Waarom gebruik je citroenzuur om vegan kaas te maken?<\/h3>\n<p>Zuur is erg belangrijk bij kaas, het zorgt voor smaak, maar ook voor bescherming tegen bederf.\u00a0 Veel vegan kazen worden niet gefermenteerd, waardoor ze smaak missen, maar ook gevoelig zijn voor bederf.
