Kies zelf je koji-variant: rijst, gerst of emmertarwe.<\/p>\n<p data-start=\"265\" data-end=\"580\">Met deze miso-kit maak je niet alleen een voedzame fermentatie \u2013 je cre\u00ebert ook een moment van rust en verbinding met de eeuwenoude Japanse traditie. Of je nu een ervaren fermentista bent of net begint: miso maken met deze kit is eenvoudig en het resultaat geeft een diepe, complexe basis aan al je kookcreaties, van soepen tot sauzen, dressings en marinades.<\/p>\n<p data-start=\"265\" data-end=\"580\">Geen speciale keukentools of ervaring vereist.<\/p>\n<h3 data-start=\"582\" data-end=\"612\"><strong data-start=\"586\" data-end=\"612\">Deze &#8216;Miso kit&#8217; bevat:<\/strong><\/h3>\n<ul>\n<li data-start=\"615\" data-end=\"623\">1L pot<\/li>\n<li data-start=\"615\" data-end=\"623\">thermometer sticker<\/li>\n<li data-start=\"650\" data-end=\"668\">instructieboekje<\/li>\n<li data-start=\"671\" data-end=\"681\">kaasdoek<\/li>\n<li data-start=\"684\" data-end=\"702\">200 gram zeezout<\/li>\n<li data-start=\"705\" data-end=\"740\">500 gram biologische EU sojabonen<\/li>\n<li data-start=\"743\" data-end=\"753\">elastiek<\/li>\n<li data-start=\"756\" data-end=\"846\">Koji: 400 of 500 gram, afhankelijk van het type dat je kiest (rijstkoji, gerstkoji of emmerkoji). <strong data-start=\"809\" data-end=\"846\">Vergeet niet je koji te kiezen!!!<\/strong><\/li>\n<\/ul>\n<h3 data-start=\"853\" data-end=\"901\"><strong data-start=\"857\" data-end=\"901\">Miso maken met deze kit \u2013 stap voor stap<\/strong><\/h3>\n<ol>\n<li data-start=\"906\" data-end=\"971\">Week 250 gram sojabonen in ruim kraanwater voor ongeveer 8 uur.<\/li>\n<li data-start=\"975\" data-end=\"1047\">Week 250 gram koji-granen ongeveer 2 uur en giet af. Bewaar het water.<\/li>\n<li data-start=\"1051\" data-end=\"1150\">Kook de sojabonen 45-60 minuten tot ze zacht zijn. Giet af en laat afkoelen tot kamertemperatuur.<\/li>\n<li data-start=\"1154\" data-end=\"1233\">Maal bonen en granen tot een gladde pasta in een keukenmachine of vleesmolen.<\/li>\n<li data-start=\"1237\" data-end=\"1336\">Voeg indien nodig wat van het koji-water toe om een <strong data-start=\"1289\" data-end=\"1309\">pindakaasachtige<\/strong> consistentie te krijgen.<\/li>\n<li data-start=\"1340\" data-end=\"1386\">Weeg de pasta en meet 8% zout af. Meng goed.<\/li>\n<li data-start=\"1390\" data-end=\"1461\">Doe in een schone pot en druk stevig aan om luchtbellen te vermijden.<\/li>\n<li data-start=\"1465\" data-end=\"1535\">Strooi een laagje zout bovenop en sluit af met kaasdoek en elastiek.<\/li>\n<li data-start=\"1539\" data-end=\"1698\">Fermenteer 2-24 maanden op kamertemperatuur, uit direct zonlicht. Controleer regelmatig. Als er schimmel verschijnt, schep deze weg en strooi opnieuw wat zout. Jonge miso&#8217;s zijn licht en fris, langer gerijpte miso&#8217;s zijn vaak aards, diep en complex.<\/li>\n<\/ol>\n<h3 data-start=\"1705\" data-end=\"1717\"><strong data-start=\"1709\" data-end=\"1717\">Tips<\/strong><\/h3>\n<ul>\n<li data-start=\"1720\" data-end=\"1771\">Probeer eens andere bonen. Dit werkt net zo goed.<\/li>\n<li data-start=\"1774\" data-end=\"1918\">Verlaag het zoutgehalte naar 6% of zelfs 4% voor meer aroma en lichtere miso. Let wel op schimmelvorming. Minder zout = meer kans op schimmel.<\/li>\n<li data-start=\"1921\" data-end=\"2061\">Pas de verhouding koji:bonen aan naar jouw smaak. Meer koji = zoeter en sneller klaar. Meer bonen = hartiger en beter om langer te rijpen.<\/li>\n<li data-start=\"2064\" data-end=\"2136\"><strong data-start=\"2064\" data-end=\"2080\">Weinig tijd?<\/strong> Fermenteer op 45-50\u00b0C.
