Lees ook meer op <a href=\"https:\/\/www.aziatische-ingredienten.nl\/tempeh\/?highlight=tempeh\" target=\"_blank\" rel=\"noopener noreferrer\">Aziatische Ingredi\u00ebnten<\/a> en <a href=\"https:\/\/tokowijzer.nl\/2009\/07\/10\/tempeh\/\" target=\"_blank\" rel=\"noopener noreferrer\">Tokowijzer<\/a>.<\/p>\n<p><strong>Ingredi\u00ebnten<\/strong><\/p>\n<ul>\n<li>250 gram droge sojabonen (toko of turkse supermarkt)<\/li>\n<li>1 gram<em>\u00a0<\/em>tempeh starter<\/li>\n<li>15 ml azijn<\/li>\n<\/ul>\n<p><strong>Benodigdheden: <\/strong><\/p>\n<ul>\n<li>kunstdarmen<\/li>\n<li>Een warme plek waar het 25-35 \u00b0C is (oven, dekbed met elektrische deken, multifunctionele fermentatiekast of de bak die je ook gebruikt voor koji)<\/li>\n<li>thermometer<\/li>\n<li>prikker<\/li>\n<\/ul>\n<p><strong>Instructie<\/strong><\/p>\n<ol>\n<li>Was de bonen en week ze gedurende een nacht in ruim water.<\/li>\n<li>Kook de bonen een uur of vier.<\/li>\n<li>Laat afkoelen en ontvlies ze zo goed en zo kwaad als het gaat door ze in ruim water tegen elkaar te wrijven. De vliesjes gaan drijven en die kun je er vanaf scheppen.<\/li>\n<li>Droog de ontvliesde bonen tot ze enigszins droog voelen aan de buitenkant. Ze hoeven niet kurkdroog te worden.<\/li>\n<li>Verzuur de bonen door ze te mengen met de azijn.<\/li>\n<li>Ent de bonen met de startercultuur. Meng de schimmel zeer goed door de bonen.<\/li>\n<li>Pak de bonen strak in een kunstdarm en prik daar met je prikker elke paar centimeter gaten in. De schimmel heeft namelijk zuurstof nodig, maar ook weer niet te veel.<\/li>\n<li>Laat beschimmelen op de warme plek. Elke temperatuur tussen de ca 25 en 35 \u00b0C is prima.
