  • Ceramic fermentation crock:  the natural way to make your own fermented vegetables, including pickles, sauerkraut, kimchi, and more. Ceramic crocks are the best choice for fermentation as the material of the crock acts neutral in contact with vegetables.
  • Wooden vegetable slicer: a handy tool in your kitchen for quickly cutting all kinds of vegetables. You can set this mandolin in different positions so you can control exactly how thick you want to cut a vegetable. You really have to think in millimeters but this can make a world of difference.
  • Pickle pounder: pounding your vegetables is very important for fermentation, as it releases water which is needed for the bacteria to do their work as well as for protecting your vegetables from oxygen. Pounding can be done by hand, but this Pickle Pounder is the perfect tool for it.

How to make your own sauerkraut

  1. If the cabbage fits in the slicer (approx. 1 kilo), hold the base and slice it entirely
  2. If not, cut it into quarters and remove the tough core and base. Then slice the cabbage into thin strips with the mandolin and put them in a mixing bowl
  3. Pound the cabbage firmly with the Pickle Pounder for a few minutes until moisture is released.
  4. Place the seasoned cabbage and the natural moisture in the crock in small batches.
  5. Push the cabbage firmly down with the weighing stones until the moisture covers it.
  6. Let the cabbage ferment for 1-2 weeks at room temperature, away from direct sunlight or up to 6-8 weeks at temperatures of 5-10 degrees
  7. Remove the lid from the jar and taste with a (clean) fork whether the taste is to your liking.
