  • How do you make yogurt yourself?
    To make basic yogurt, first heat milk to about 90°C and maintain that temperature for 10 minutes. Then let it cool to 42-43°C. Add a yogurt culture and mix well. Keep the milk in the yogurt maker at 42-43°C for 6-8 hours. The milk will thicken and become sourer. Cool it down to refrigerator temperature and enjoy. Instead of heating milk first, you can also use sterilized milk.
  • What does a yogurt maker do?
    A yogurt maker is a device that heats milk to the perfect fermentation temperature needed to make yogurt. This temperature varies depending on the type of yogurt you want to make. Most yogurts are made at a temperature of around 42-43°C, but some require temperatures of 32°C or room temperature. Hence, a yogurt maker with variable temperature settings is handy.
  • How long should yogurt be in a yogurt maker?
    The duration for which milk needs to be in a yogurt maker varies. For most yogurts, the so-called thermophilic yogurts like stirred and set yogurt, or Greek or Bulgarian yogurt, the duration is about 6-8 hours. Mesophilic yogurts, which are made at room temperature or around 32°C, often need 12-48 hours before the yogurt is ready.
  • Can you make yogurt from raw milk?
    Making yogurt from raw or unpasteurized milk is tricky. To get a good firm structure in the yogurt, it’s necessary to heat it for some time to about 90°C. This heating process changes the structure of the milk proteins, especially casein. At higher temperatures, these proteins form a network that is better at retaining water, resulting in a thicker and firmer yogurt. Without this step, yogurt made from unpasteurized, and pasteurized milk will always remain fairly thin.
  • How much milk is needed for 1 liter of yogurt?
    The conversion of milk to yogurt is almost 1:1. That means you get 1 liter of yogurt from 1 liter of milk. That’s a great yield! For some types of yogurt, a little bit of whey, a clear liquid, is released, which sometimes is not consumed. Then the yield might be around 98%. If you let your yogurt drain after making it, you will have less yield as the yogurt thickens into something like strained yogurt.
  • Is it cheaper to make yogurt yourself?
    Yes, it’s cheaper to make yogurt yourself than to buy it in the store. You only need milk and a yogurt maker. Additionally, you don’t have to pay for packaging or travel costs to and from the supermarket. So, the yogurt maker quickly pays for itself.
