What is the difference between water kefir and kombucha?
Water kefir and kombucha are both fermented drinks. Both contain different bacteria and yeasts, and both are wonderfully fresh and carbonated. However, they are made with very different micro-organisms. The taste of kombucha is often more sour than water kefir. Kombucha is traditionally made from sweet tea, and water kefir often contains dates and figs. Here you can read more about our komboecha starter.
Micro-organisms in your kombucha starter kit
No two kombucha SCOBYs are alike, but the following microbes are found often.
Yeasts: Schizosaccharomyces pombe, Torulaspora delbrueckii and Zygosaccharomyces bailii. You will also find various candida and aspergillus yeasts.
Bacteria that are often found in kombucha are Bacterium xylinum, Bacterium gluconium and Acetobacter hetogenum.
The aroma is slightly yeasty and the taste is fresh, but becomes sharper with a longer fermentation time. Depending on the method of preparation, a mild fizz will created and in the distance you often taste some residual sweetness and some of the bitterness of the tea. The longer you let kombucha ferment, the more sugars are converted and the more acidic the result.
