What is 2nd fermentation?
When making your natural soda, the second fermentation is the process where already fermented water kefir, ginger beer, milk kefir, jun, or kombucha continues to ferment for a short period, usually 24-48 hours, in a sealed pressure-resistant bottle at room temperature.
During the second fermentation, the bacteria and yeast in the grains continue to metabolize the remaining sugar in the liquid, resulting in a lower sugar content and a more complex, tangy flavor. The sealed bottle traps the carbon dioxide produced during fermentation, giving the final product natural carbonation and a fizzy texture.

- Less sugar: the yeasts eat part of the remaining sugar, so the drink turns drier.
