Content of this blue cheese starter kit
- Mesophilic gas-forming cheese starter culture MSE
- Penicillium roqueforti – blue cheese mold
- Rennet (for coagulation)
- Calcium chloride (needed for pasteurized storebought milk)
- 3 small soft cheese moulds
- a draining mat
- optional: 5 set cheesecloth
How do you make blue cheese?
The most important thing to remember when making blue cheese is that you need to grow mold inside of the cheese. This requires air inside the cheese. Puncturing the cheese when ripening is a minimal requirement, but the technique is also important as well as using a gas forming starter culture that creates airpockets. This blue cheese starterskit contains such a starter culture of course.

I missed having an A4 sheet with all the steps. You have to go through the entire course again — which is very good and clear, by the way — when you want to check or reread something afterward. The “yogurt” course included a leaflet with the most important steps. That would also be useful here.
